Chocolate Chip Banana Bread Recipe

One Sunday morning I woke up and opened up my cupboards to find something to eat. In there, I found some very ripe bananas and I got the idea to make banana bread. I looked up the recipe and what do you know! I had every single ingredient that I needed so it was a done deal. The recipe I found was from Simply Recipes and I want to share that recipe with you because it was absolutely delicious!


Alright, so here's the ingredients that you'll need:

2-3 very ripe bananas
1/3 cup melted butter
1 cup of sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
(I added some chocolate chips)

Preheat the oven to 350°F and butter a 4x8-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes) at 350°F, or until a tester inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

Book Review: Why Not Me?

Normally when I read books that I'm going to do a book review post on, I like to take notes about what I'm reading and what I think so that way I don't forget with the little pea brain that I'm working with. But when I was reading Why Not Me? by Mindy Kaling, I couldn't take notes because I would be writing down the book word for word but that is plagiarism (noun; the practice of taking someone's ideas or work and passing them off as your own) and that is very, very wrong kids.

That being said, I really, really, really enjoyed this book. Mindy is one of my favorite comedy actresses along side Amy Poehler and Tina Fey. I watched her on The Office and am currently watching her on The Mindy Project, both shows that I could easily binge watch over and over again.

She writes in such a way that is very lovable and it feels like you're someone that she's opening her life up to and telling you about some personal things that she has gone through. I both laughed during this book and also saw myself in some scenarios that she has been through. She also gives some pretty solid style and beauty advice, so what I'm saying is that Mindy is the total package. I loved this book just as much as I loved her first book.

Agh, Mindy. How I wish that you would be my quirky, very stylish best friend that I can tell all of my secrets to and gossip about our lives...
